Saints’ Days and their special pilgrimages " Romerías"
There are two of these in May and another more important one in August. Both are dedicated to The “Virgin del Puerto” (The Virgin of the Mountain Pass) whose image is taken each year from its shrine (16 km away) to the village church and it is then taken back until the following year.
All the towns and villages in the Park have their own Saints Day Pilgrimage during the months of May to September and these are not only well worth seeing but taking part in too, thanks to the friendliness ofthe local folk ,who make that an easy thing to do.
You can get more tourist information in the section on “The Surrounding Area” or by calling the town halls of the places whose numbers are given on this site..
Music (Zufre)
In the month of July a week-long musical festival is held, with performances in different locations in the village: piano concerts in the square, Flamenco in the village Assembly Hall. Singer-songwriters…
Gastronomy
The area around Jabugo (40 km from Zufre) is well-known nationally and internationally for its Iberian Pork and by-products. Highlights are the ham, the “Chacina” (Dried pork), sausages, all top-quality products that can be tasted throughout the park. There is a wide variety of toadstools which are highly-appreciated for their culinary excellence and you can find an exquisitely-tasting goat’s cheese.
The gastronomical wealth offered by Zufre is unique and it is based on the variety and quality of the raw materials, some of which are not even found in the rest of the mountain villages in the area, such as the fish from the local river, used to make “fish casserole”, along with potato and bread and a sauce spiced with hot chilli peppers.
Stews made from kid are very common, as are lamb casseroles. The products of the “Matanza” (a traditional slaughter of animals, mainly pigs, for the subsequent use of the meat in providing for the family’s needs throughout the following year), are used to make “winter gazpacho”, with heart, liver and lungs.
Game, such as venison, wild-boar meat and smaller game, such as rabbit, often find their way to local tables as do toadstools collected in the local area. These include the “gurmelo” (at Easter) the “tanas and “tentullos” which are cooked in various ways- on a hotplate, fried with garlic and wine, included in scrambled egg or rice-based dishes or even in the chick-pea stew of the mountain villages.
Locally-produced mountain olive-oil can be acquired in season at the “Cooperativa Olivarera, Nuestra Señora del Puerto” whose olive press can be found in “Paseo de los Alcaldes”..
In Winter (The olive-oil festival is held in January).
There is a wide range of sweet things to eat: pestiños (small honey-glazed flaky pastries), roscos (doughnut-shaped), tortas de manteca (buns made with lard) y chicharrones( sweet buns made with suet which may contain small pieces of pork) , which are often eaten when the traditional family “Matanzas” (see above) takes place.

The park is a place where there is a strong tradition of interest in mycology, being one of the areas of Spain with the greatest variety of toadstools. These include some from the amanita genus, as well as boletus toadstools. Large quantities of these are picked here and are highly appreciated for their quality, gastronomically speaking.
The mycological wealth of these parts is based on its high level of rainfall, the mildness of the temperatures, the variety of soils, the ground cover and the different outlooks of the various terrains, which allow toadstools to be picked almost all year, especially in Spring and after the first autumn rains.
Amongst the species which are the most highly valued are the “Tana” (Amanita caesarea), queen of the toadstools in the mountain range. It is full of flavour and comes out in the dampest terrains in autumn. We also see the “Gurumelo” (Amanita ponderosa), which is not as well known, but it is appreciated locally and it is one that people go out to look for in Spring
Others which are of high quality are the “Tentullos” or “Boletos” (Boletus Edulis), the “pinatel” or “níscalo” (Lactarius deliciosus),the “Josefita” or wild mushroom (Agaricus campestris), “The Tentullo”(Boletus aereus), the Chantarelle or “Rebozuelo” (Cantharellus cibarius), which are graet for preserves, or the “gallipierno (Macrolepiota procera), which can be found in many places and is very flavoursome.
We recommend that those who are interested get in touch with the Mycological Association in Aracena
